I noticed that GFS have been doing some good, more unusual recipes for the Thanksgiving season on their blog recently using plantains.
Go and have a look at the Flatbread and the Bundt Cake (new one on me??), Presumably you can swap the plantains for other yams or bananas and, of course, other nuts or seeds for the almonds. There is even a chocolate date icing which sounds yummy. You can easily leave out the cocoa powder if on the Barrier Diet.
