Truly #Gluten Free Roasted Squash Salad

Personally, I never quite know what to do with butternut squash as it takes so much effort to chop it, but roasting it always tastes so yummy.

Can anyone tell me any easy way to peel and chop a squash; I’m sure I would eat more if I had an easier route being the lazy so and so that I am?!

  1. Apparently it isn’t necessary to peel butternut squash, the skin will soften as it roasts. I’ve never trusted it to do so and find it easier to remove the skin once it’s cooked….doesn’t waste as much either!

  2. the hubby held it under warm water, then uses a mandolin thingie to peel is (sorry, don’t know the proper word in english, we call it a ‘thin-slicer..sounds medieval right?) and cuts it up. We used to do a few so we could freeze it, and then just get it out when we needed it.

  3. A couple of spoons works well to get the cooked skin off!

  4. Once roasted you can eat the skin too…weird but true.

  5. Here in Croatia we buy it on the market already peeld and sqared/grated šŸ™‚
