#Truly #Gluten Free Stuffed Peppers

Another recipe for you from the video series at Gluten Free Society. This time: stuffed peppers. You could, of course, stuff anything you like – courgettes, marrows, long sweet peppers etc.

In this one, I like the use of grated cauliflower instead of rice. I haven’t quite yet tried the grated cauliflower as a rice substitute thing yet, but in this I can see how that would work to give it a bit more depth, not to mention all the extra nutrients in this brassica family veg. I quite fancy the idea of marrying cooked, mashed sweet potato with something strong like venison or bison mince too. I might have a go at that.

My other advice would be to watch citric acid in tinned tomatoes and use glass-bottled passata instead if you can. Choose different coloured peppers as the video shows here – each colour contains different antioxidants.

I think I might start a cooking series of my own soon, if you think that would be a good idea?

In the meantime, get stuffing!
