Guest Recipe: Val’s Gram Flour Crackers

Recently, I was chatting to a couple of people who were desperate for crunch in their TGF diet. Then, along came Val with this cracker recipe so I asked her to write it up for us all. I haven’t tried them yet, but here is the recipe for you, complete with a few comments from me. Thanks Val!

Gram Flour Crackers

2 teaspoons fennel seeds (dry fried in a small pan)

5 oz gram [chickpea] flour

2oz dairy free margarine [eg Pure spread or you could use coconut oil]

1 egg

1 teaspoon stock powder (optional)  or you could just substitute some sea salt and herbs.

Mix all together and bind with the egg. Press it into a greased Swiss roll tin. It will be very thin, but use your fingers to spread it out to cover the tin. Cut into 12 slices.

Bake at 140/ 160  degrees for 10 to 15 mins. The biscuits will start to shrink away from the sides and should then be easy to separate. They will keep almost indefinitely in an air-tight tin and so are great for holidays etc.

They sound yummy and I shall try them. I fancy putting some herbs such as rosemary in, or maybe some chopped dried oregano, although if you had them plain, they would be more versatile I suppose.
